Honey-pumpkin muffins
Halloween is becoming increasingly popular in our country, so it's obvious that we are also adapting to foreign influence. Children ask for sweets for Halloween and want to dress up as princesses and superheroes. How to please your child and those around you? How about honey-pumpkin muffins that everyone will love?
Prepare a festive lunch or dinner that even the biggest gourmets won't forget.
FOR A STANDARD BATCH OF MUFFINS YOU WILL NEED:
- 225 g Hokkaido pumpkin
- 200 g plain flour
- 150 g butter
- 200 g meadow honey Medokomerc honey
- 1 medium egg from a happy hen
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- grated nutmeg
Instructions:
Peel the pumpkin, remove the skin and seeds, and then cut it into slices about 2-3 cm thick. Wrap it in aluminum foil and place it in the oven, where you bake it for an hour at 200°C. When the pumpkin softens, open the foil and let it cool. In the meantime, start whisking the butter and add the honey, mashed pumpkin and finally the egg. When all the ingredients combine and create a creamy consistency, you're halfway there. Sift the flour, baking soda, add salt and spices into a bowl and mix well. At this point, start adding all the dry ingredients to the batter and continue whisking until everything is perfectly combined. Voilà, the dough is ready. Take a muffin tin and place a paper cup with a Halloween motif in each mold (there are no limits to the imagination). Put the dough in a pastry bag, or use a spoon, it's up to you. Put the required amount of dough into each cup - it should be a solid, level layer - keep in mind that the muffins will pop out and make a cap over the cup. Place the molds with the dough in the oven and bake for 15-20 minutes at 200°C.
