A long-lasting aroma. Reddish-brown color with a glossy surface. A malty, spicy, and pleasantly acidic taste. Is your mouth already watering without even knowing what we're talking about?
That's good. But if you think that something that looks so beautiful, tastes divine, and smells great is some kind of luxury liqueur, you're wrong. The description above - albeit in somewhat sommelier-like language - captures the essence of a food that every small child knows. We're talking about honey, specifically spruce honey.
Spruce isn't just a cone
An aroma reminiscent of syrup made from the tips of spruce branches, resin, herbal candies, herbal tea, roasted coffee, dried fruit, and coffee candies. Many of these flavors can be discovered in spruce honey by a discerning palate. In terms of sensory properties, pure spruce honey simply ranks among the absolute world's best due to its deliciousness. Better honeys in Europe are only heather and fir honeys, which unfortunately are not found in the Czech Republic. "In recent years, thanks to the favorable honeydew honey flow in a few locations in Bohemia and Moravia, we have, among other things, purchased single-varietal honeydew spruce honey, which is highly sought after even among our foreign customers," says our director, Mr. Špaček.
Thanks to the established traceability system for purchased honeys, it is possible to determine during the inspection of these honeys in the warehouse from which area the honeys are the tastiest in a given year. "The sensorially best spruce honeys in 2017 come from the Vlašim Highlands and partly from the Křemešník Highlands. This is pure Czech nature located in the middle of deep spruce forests that are not affected by any emissions. It is from these areas that the most delicious honeys that Czech beekeepers have produced this year come from," reveals Milan Špaček, the secret of the origin of the excellent honey.
