Christmas honey beehives
Simple, impressive, and delicious cookies that are a must-have on any holiday table.
Ingredients:
- 200g sponge fingers + sponge fingers for the bottom of the nests - depending on the number of pieces (approx. 25 pieces)
- 100g icing sugar
- 80g butter
- 4 tablespoons rum
- 1 tablespoon cocoa
- 4 tablespoons of Medokomerc flower honey
- and of course a beehive mold
Filling:
- 1 tablespoon condensed milk
- 2 tablespoons rum
- 1 egg yolk
- 100g butter
- 80g sugar/honey
Instructions:
Grind or crush the sponge fingers, then add the other ingredients needed to prepare the dough. Work into a smooth mass and only add honey at the end until the dough has the right consistency. Then wrap the dough in foil and put it in the fridge for 1 hour. In the meantime, prepare the filling. Whip all the ingredients into a smooth cream. Lay out the sponge fingers and carefully drip rum on them. Sprinkle the mold with sugar and press the hardened dough from the fridge into it. Use a wooden spoon to make a hollow, into which you pour the filling. Close with a sponge finger. Proceed in this way for all the beehives.
