Honey gingerbread balls
Make sure to taste them before they all roll away.
Christmas is fast approaching, and many homes already smell of it, taste it, and hide it from the prying fingers of all generations. To satisfy your stirred taste buds, you can surprise your family with quick gingerbread balls that will remind them of their favorite cake. And one of the ingredients will be, as the name suggests, honey.
You can easily prepare gingerbread balls in an hour. This recipe is for approximately 20 servings.
You will need:
For the dough:
- 500 g all-purpose flour
- 2 eggs
- 4 tablespoons honey
- 200 g powdered sugar
- 60g butter
- 2 teaspoons baking soda
For the cream:
- 250 g butter
- 1 can of caramel condensed milk
Instructions:
Pour melted butter and liquid honey into a large bowl. If it has a thicker consistency, simply heat it in a water bath to 60 °C. Add eggs and sugar and mix until everything is nicely combined. Mix the flour with baking soda, pour into the bowl, and knead the dough. Then roll it out on baking paper into two equally thick sheets (two baking trays). Bake them for about 10 minutes at 180 °C and then let them cool.
Now it's time to prepare the cream. Mix the condensed milk with the softened butter. No rocket science. Once the dough has cooled, crush or blend it into small crumbs. Set aside about two handfuls, these will go on top, pour the rest into the cream and mix. Then cover and refrigerate for two hours.
Form balls from the resulting honey mixture, roll them in the remaining crumbs, you can also add blended nuts. Ideally, place the balls in paper cups and pop them back into the fridge. Given how good they are, you probably won't save them until Christmas, but nothing prevents you from making them again.
