Slow-roasted duck with honey and sesame
Recipe for roasted duck with honey and sesame.
Prepare a festive lunch or dinner that even the biggest gourmets won't forget.
Ingredients:
- 1.5 - 2kg duck
- 2 teaspoons coarse sea salt
- 2 teaspoons sesame seeds
- 4 tablespoons forest honey from Medokomerc
- Freshly ground pepper
For the sauce:
- 125 ml red wine
- 150 ml chicken broth
- a knob of butter
Instructions:
Preheat the oven to 160 degrees Celsius. Score the duck breasts several times with a sharp knife and salt and pepper the entire duck. Place it on a rack, put it in a baking pan and bake for an hour and a half. Then set the duck aside and drain the rendered fat from the pan. Return the duck to the baking pan and drizzle it with 3 tablespoons of forest honey. Bake for another hour. After 10-15 minutes of removing the duck from the oven, drizzle it with the last tablespoon of forest honey.
Sauce:
Drain all the fat from the baking pan, leaving only a little of the roasted juices with honey. Place the baking pan on the stove, and as soon as the contents start to sizzle and caramelize, pour in the red wine and reduce it to a third. Then add the broth and cook for several minutes until the sauce thickens. Soften it with butter, salt and pepper to taste.
